Description: Sentry was still on v7, whose hub and transaction API was removed in v8, so Renovate's #676 has failed CI since 2024.

1. Each app's start script now loads dist/instrument.js with --import, which v11 needs to trace http, Fastify, Nest and Mongo. Anything that runs node . directly needs the flag too, like the Dockerfiles in chore(docker): build an image for each app #1047.
2. @statsify/logger also sends its lines to Sentry Logs.
3. Sentry 11 collects user IPs, cookies, request bodies and database query data by default, so each app turns those off, and the API no longer sends raw request headers, which had API users' x-api-key.

Testing: each app's instrument file loads through its start script's --import (not tried against a real DSN yet), and /bedwars renders the same as on main.

In Sentry, once this and its follow-ups deploy:

• Add an uptime monitor on https://api.statsify.net/healthz (feat(api): add a /healthz endpoint for uptime monitors #1055).
• Turn on Seer in the org settings, with the GitHub integration.

Merge after #1002, #1003, #1016, #1028, #1029, #1036, #1052 and #1053. It conflicts with #1028 and #1029 in the package.json files and the lockfile, and with #933, #983, #985, #988 and #1044 where they touch the old Sentry calls.
