Support unsetting environment variables with YAML null #142

Consider treating VAR: null (including VAR: ~ and VAR:) as an explicit instruction to unset the variable, suppressing values from included stacks and the shell.

Review existing null handling and define how references and default operators interact with explicitly unset variables. Add tests and documentation for the agreed behavior.
