Why

cachix/install-nix-actiongives both upstream Nix and a pinned version. We want upstream Nix because:determinate-nixddaemon and no FlakeHub integration we don't use.Cachix is also a company, but this adds no new dependency: we already use its cache, and the action only runs the official upstream install script, so replacing it would not change the Nix we run.
