docs(evidence): add the 7-day mainnet run of v0.1.0 - #703

Add docs/evidence/mainnet-run-2026-10 with the setup, the results, the problems found and the limits of the run, plus three data files: one row for each hour of metrics, one row for each part of the live TWAP, and the engine log of the window with the RPC endpoint replaced. Add the run to "What is tested" in the Kubernetes guide. AI Assistance: Claude Code used for collecting the metrics and logs, and for drafting the documents.

Adds the evidence of the 7-day mainnet run of
v0.1.0, for the final grant report.docs/evidence/mainnet-run-2026-10/README.mdgives the setup, the results, the problems that the run found (#701, #702) and the limits of the run.Data files:
hourly-metrics.csv(168 hours from Prometheus),twap-parts.csv(the 28 parts of the live TWAP, with order UIDs and settlement transactions) andengine-log.jsonl.gz(8,673 engine log lines from the window, with the RPC endpoint replaced).The Kubernetes guide now lists the run under "What is tested".
No code changes.
Closes #658: the orderbook accepted an ERC-1271 order from an EIP-7702 account, and a solver settled all 28 parts.
Closes #65: the 7-day unattended run is now recorded, with 168 hours of metrics and the engine log.
