Bump mc-observability images to 0.7.3, matching the upstream v0.7.3 tag.

Bug Fixes

Insight & RCA

• fix: Store predictions in their own measurements (cpu_prediction, mem_prediction). Running a prediction no longer deletes the anomaly detection history of the same node
• fix: Keep the RCA hypothesis cause length limit out of the output schema sent to the model. Ollama models failed the final RCA step with "failed to load model vocabulary required for format"
• fix: Let RCA_ANALYSIS_TIMEOUT_SECONDS override the RCA analysis time limit so a slower local model can finish

Breaking Changes

• Prediction history saved before this release is not shown after the upgrade. Run the prediction again to fill it

Changes in this PR:

• docker-compose.yaml: mc-observability images 0.7.2 -> 0.7.3
• docker-compose.yaml: pass MC_OBSERVABILITY_RCA_ANALYSIS_TIMEOUT_SECONDS to mc-observability-insight as RCA_ANALYSIS_TIMEOUT_SECONDS (unset keeps the 300s default)

No agent install files changed in v0.7.3, so the mc-observability-infra ansible directory needs no sync.
