Fix the 1.17.1 wheel matrix after hosted runners added Python 3.15. The current PyO3 supports up to 3.14, but find-interpreter scanned unrelated installed versions rather than only the version selected by each matrix job.
Select the requested Python version in manylinux/musllinux containers and the setup-python interpreter on Windows/macOS. Keep the lockfile and disable fail-fast so every platform reports its result. No package code or version changes. A new build tag will retry publication of the still-unpublished 1.17.1 package.
