Align Expo SDK 57 package versions so quality validation passes #6

Problem

The validate job on Dependabot PR #5 fails expo-doctor: 17 installed packages are behind the patch versions required by the current Expo SDK 57 release. TypeScript checks pass, but dependency validation remains red.

Required work

• Run the Expo-compatible dependency alignment using Bun for the project workflow.
• Update the manifest and lockfile together.
• Verify expo-doctor, app typecheck, worker typecheck, and the full quality workflow.
• Keep the change scoped to SDK-compatible patch alignment unless a larger upgrade is explicitly justified.

Acceptance criteria

• expo-doctor reports all checks passing.
• The ListingOS quality / validate job is green.
• No application behavior regressions are introduced.
