Description
Proxies running the Velocity build of the plugin reported their plugin version as
unknown. Dashboards built on those metrics could not tell which release a given proxy was running, so rollouts were hard to verify. The shaded jar now declares its version in the manifest, so the plugin reports the release it was built from.Change Type

Details:
Built the shaded jar with
./gradlew shadowJar --max-workers=2 --no-daemon. The manifest ofbuild/libs/MinecraftOTEL.jarnow contains:This matches
version = "1.6.1"inbuild.gradle.kts. The Paper plugin metadata is unchanged. The unit test suite was not run; the change only touches the manifest.Checklist
