chore: remove PostHog analytics - #69
Merged

Conversation
The API carried a production-only `/events` reverse proxy that forwarded analytics payloads to PostHog with a server-side bearer token. Nothing in the open-source stack sends those events: the frontend has no PostHog client, and oswatcher-deploy no longer configures a key. Removed the `/events` endpoint, the `POSTHOG_HOST` / `POSTHOG_PROJECT_API_KEY` env vars, the now-unused `axios` dependency, and the docs describing them. Verified: tsc build, eslint and prettier --check all pass. Co-Authored-By: Claude Sonnet 5 <noreply@anthropic.com> Claude-Session: https://claude.ai/code/session_014WnrRvhmHcMPj6iwJ2NnzK
