Documents Mogplex/mogplex#652: the bundled Postgres runs under the postgres compose profile (COMPOSE_PROFILES=postgres in .env.example). External-database users remove it, and then no local Postgres starts.

• Environment variables: adds COMPOSE_PROFILES to the Docker Compose table.
• Quickstart: the postgres service row explains the switch.

Merge order: after Mogplex/mogplex#652 merges.
