This bumps the version to 1.2.0 in the three manifests (package.json, src-tauri/Cargo.toml, src-tauri/tauri.conf.json) and in the two lockfile entries that record the app's own version. These are the same edits as just bump minor.

scripts/check-release-readiness.sh 1.2.0: OK. The manifests agree with each other and with the tag.

This is the first release since #746 replaced dtolnay/rust-toolchain with rustup. The release jobs' toolchain step will run on Windows and macOS for the first time. The repo's own advice in docs/RELEASING.md applies: cut a release after changing the release workflow, because problems there only show up when the pipeline actually runs.

After merge

Tag the merge commit v1.2.0 and push the tag. release.yml then validates, runs the database integration tests, builds all 4 platforms, and creates a draft release. Nothing reaches users until the draft is published.
