Older versions for astral-sh/uv fails

Not sure if this was intended but just wanted to report that these lines make older releases fail. I think it happens because listing GitHub releases API is only limited to the latest 30 releases. We may want to use this API endpoint instead to get a release by tag or update the documentation to mention that it is only limited to the latest 30 releases (not sure if intended).

I can open a PR to fix this if needed.
